Oh, this "Soviet" taste of sweet brushwood! Simple cookies appeared in Russian national cuisine in the eighteenth century thanks to foreign chefs and confectioners who prepared this crispy brittle product as a dessert for the rich and other nobility.
In Soviet times, brushwood was reborn. The general deficit forced the people to contrive. And a lot of people wanted sweets. Here mothers and grandmothers were refined as best they could. Cookies were called brushwood because of their resemblance to fallen branches and leaves of trees. Despite the fact that now the confectionery world is extremely rich, this sweetness continues to take its place among cheesecakes and strudels. And its taste makes people nostalgic for the wonderful Soviet era.

The classic brushwood recipe is incredibly simple. It turns out thin and crispy. The vodka included in it can scare someone: "What kind of cookies are these and how do children eat them?" But do not worry - during heat treatment, alcohol vapors completely evaporate. Add vodka, rum or cognac to a confection to enhance its crunchiness.
Required ingredients:
- Two eggs.
- Half teaspoon s alt.
- 230 grams of flour.
- One and a half tablespoons of vodka.
- Powdered sugar.
- Refined vegetable oil for frying.
Let's start cooking
Dough according to the classic brushwood recipe is easy to make - you just need to mix all the ingredients. Beat the chicken eggs a little with s alt and vodka, then carefully add the flour to avoid the formation of lumps. The result is a rather elastic dough that sticks a little to the hands. We wrap it in cellophane and put it in the refrigerator for about forty minutes. Then we start rolling. To do this, it is better to divide the dough into several pieces and put those that are not in use now back into polyethylene so that they do not dry out quickly.
Roll out the dough into a layer as thin as possible, but not so much that it breaks. Just how well you cope with this task depends on the airiness of the future food. We cut the layer into strips, make an incision in the center of each piece and turn one of the ends of the product through it. If you failtwist something out of the dough, then you can do without it - the taste of the cookies will not change.
The twigs are fried extremely quickly, most likely, you will not even have time to lay new ones and pull out ready-made ones. Therefore, be as agile as possible. There should be plenty of oil in the pan so that the cookies are completely hidden in it. As soon as the dough is in oil, it will immediately begin to puff up and take on a funny shape.
The finished brushwood should be placed on paper towels to absorb excess oil. The dish is generously sprinkled with powdered sugar or vanilla. You can also use raisins, chocolate chips or coconut chips as a topping.
Luxury and soft
Such brushwood without vodka is prepared on kefir. This allows it to be soft and fluffy, because the food does not have to be hard and crispy. Required:
- 300 ml of kefir.
- One and a half teaspoons of baking soda.
- Three cups of flour.
- Refined oil.
- One chicken egg.
- Vanillin sachet.
- A quarter teaspoon of s alt.
- Three tablespoons of sugar.
Beat the egg with sugar and s alt. We extinguish kefir at room temperature in a separate container with soda and wait a minute for the reaction to occur. Then add kefir and three tablespoons of vegetable oil to the egg. Mix thoroughly so that the s alt and sugar are completely dissolved. Without ceasing to stir, gradually introduce the flour.
The dough is soft andpretty sticky. It should be covered with cling film and allowed to stand warm for half an hour. Then the dough should be rolled out into thin layers and squiggles should be made, which we then send into boiling oil.
Kefir brushwood without vodka should also be held on paper towels to get rid of excess oil, then sprinkled with powdered sugar.
Milk recipe
If you want to make brushwood without vodka, then milk is the best substitute for alcohol. To do this, two chicken eggs need to be beaten with 80 grams of sugar until the sweet sand dissolves. After that, you need to pour two tablespoons of milk into the liquid, mix and begin to gradually introduce flour.
This dough does not need to be refrigerated or left warm, you can immediately start rolling. The procedure for rolling out the dough is no different from the above algorithm. This delicacy is tender and very airy.
With sour cream
Brushwood without vodka with sour cream also cooks faster, since the dough does not need to be kept warm or cold. Beat two eggs with 100 grams of sugar until it is completely dissolved, then add two hundred milliliters of sour cream and one and a half teaspoons of soda. Flour should be introduced gradually - it will take about three glasses. Flour consumption depends on the size of the eggs and the fat content of sour cream. The resulting soft, but still sticky dough can be immediately rolled out and fried.
On mineral water
From three glasses of flour we form a nest, into which we add a tablespoonsour cream, a little s alt, a glass of vodka or other strong alcohol, ten grams of sugar and two hundred milliliters of mineral water. First, knead the contents with a spoon, and then with your hands. The dough should be elastic. After that, you need to cover it with a towel and leave for ten minutes, and then knead again. We roll it into a layer and fold it in the form of a roll, which we cut into pieces of 1-1.5 centimeters. Then everything is as usual.
Crunchy brushwood without vodka
To achieve crunchiness without the use of alcohol, a chicken egg is mixed with a pinch of s alt and 120 grams of flour. The resulting dough is rolled into a thin layer, cut into strips and fried in oil. This crunchy, melt-in-your-mouth vodka-free brushwood should also be sprinkled generously with powdered sugar or whatever your heart desires. This recipe is extremely simple and quick. No need to wait for the dough to set, and most importantly, you need so few ingredients that can be found in every home.
Tips
You need to fry brushwood exclusively in refined vegetable oil, otherwise the cookies will acquire a dubious taste, and your whole home will smell of a specific and difficult to remove aroma.
Khvorost is served with jam, sugar syrup or condensed milk. But before that, they almost always flavor it with plenty of powdered sugar - it just so happened.
