Japanese udon noodles is considered a traditional dish. It is served with various fillings or simply cooked with spices. Japanese noodles can be white to gray in color. The big plus is that it cooks very quickly. In order to plunge into the world of the East, today we will cook noodles with chicken and vegetables. The recipe itself is very simple and economical, so anyone can handle it. When preparing a dish, you need to take into account your taste preferences. If you like spicy food, add whatever spices you like.

Dish ingredients

  • chicken breast - 500 g;
  • spice to taste;
  • soy sauce - 3 tbsp. l.;
  • udon (noodles) - 350g;
  • bell pepper - 2 pcs.;
  • dried ginger – pinch,
  • onion - 1 piece;
  • red carrot - 1 pc.;
  • chicken broth - 120 ml;
  • garlic - 2-3cloves;

Cooking chicken noodles

Let's start with vegetables. Peel the onion and cut into thin half rings. We take carrots and grate them on a Korean carrot grater. Red carrots add sweetness to the dish, as they are sweeter than pale orange carrots.

Now pour the oil into a deep frying pan and heat it up, put the onion and fry it. Onions should always be placed first, as they take the longest to cook from vegetables. When it acquires a slightly golden color, add carrots and fry for seven minutes. Do not forget to constantly stir the onions with carrots. If they burn, the dish will taste bitter.

We take the pepper, clean and wash it, and then cut into thin half rings and add to the pan. Fry for another five minutes, stirring constantly. You can add a little broth so that the vegetables do not burn. We make the smallest fire and take the breast.

Separate the chicken breast from the bone and skin, cut into pieces. They should not be very large, so that later it would be convenient to eat the dish with chopsticks. Mix everything and add spices, including ginger. If you like spicier food, you can add a couple of pieces of chili. Mix everything and add the broth. If it is not available, you can replace it with water, but the taste will not be as rich. Add soy sauce and mix again. Cover and simmer for 10-15 minutes.

While our vegetables and chicken are stewing, let's cook udon. We put the noodles in boiling water, you do not need to break it, and cook for 5-7 minutes. This will be enough time for her to get ready. When udon is cooked, drain the water and let cool for a few minutes.

Add finely chopped garlic to our vegetables and meat. It is not necessary to pass it through the press, as there should be small pieces. We mix. Then add the noodles, mix everything again and leave to languish under the lid for seven minutes. Divide the finished noodles into bowls. Sprinkle with green onions for decoration. You can also serve separately soy sauce, which will add spice to the dish. Do not forget to put chopsticks in order to fully experience the culture of the East.

For those who haven't found udon noodles or just don't like it, there is another and delicious recipe. It is more painstaking, since we will cook homemade noodles (with chicken) with our own hands. This is not a soup, because when making soup, the noodles are cooked together with all the ingredients, but here the cooking process is separate.

Ingredients

  • Carrot - 1 piece
  • Dry herb mix – 2 tbsp. l.
  • Spices to taste.
  • Large egg - 1 pc.
  • Onion - 1 piece
  • Wheat flour - 200g
  • Chicken breast - 400g
  • Sunflower oil - 3 tbsp. l.

Cooking a dish

First, we clean the breast from skin and bones, cook it for 35-40 minutes. When the water boils, add s alt and bay leaf.

While our breast is cooking, let's prepare the dough for the chicken noodle recipe. In a bowl, add well-sifted flour, then s alt, mix the dry ingredients. We form a pea and drive a large chicken egg into it, and then vegetable oil, mix everything well. We take out the resulting dough from the bowl and begin to knead it on the table. Be sure to dust the table with flour to prevent the dough from sticking. The dough should be elastic. When it stops sticking to your hands, wrap it in cling film. If it is not at hand, a bag will do. We remove the dough for half an hour to the side.

Remove the chicken fillet from the broth and let it cool. It should be warm, but not hot.

Let's cook vegetables. We clean the onion and chop it in half rings. It must be poured over with boiling water so that all the bitterness is gone, since in this recipe it does not need to be fried. Peel the carrots and cut into thin strips. It should not be very small, otherwise it will get lost in the broth. Add vegetables to the broth and cook them.

When the chicken has cooled, cut it into small strips and put it back in the pan. Add spices and dry herbs. Mix everything and set to cook over low heat. When the vegetables are ready, turn off the heat and set the pan aside.

Cooking our noodles. We unfold the dough and roll it out, the thickness of the layer should not be more than 1 cm, otherwise it may not boil. In order for the dough to roll out evenly and to be even, turn it over after each rolling. Remember to dust the surface of the table with flour so that the dough does not stick and does not tear. Now it needs to be cut. The width of each strip should not exceed 4.5-5 mm.

Cook homemade noodles in s altedwater for about 7 minutes. Once the noodles are cooked, drain the water and cover with a lid.

Put noodles in a deep plate and pour hot broth with meat and vegetables. Sprinkle with herbs on top. You can also offer croutons for such noodles.
