- 200-250g butter;
- 150-200g sugar;
- 1.5 tbsp flour;
- 3 eggs;
- 2 tbsp. l. sour cream or cream;
- 10g vanilla sugar;
- 1 sachet of baking powder;
- 1 tsp soda;
- vinegar;
- raisins.
To save money, butter can be replaced with margarine or spread. As a filling for this cake, we suggest using raisins, add it based on yourtaste preferences. For those who cannot stand raisins, add a little dried apricots or poppy seeds to the dough. For flavor, shortcake recipes suggest adding a little lemon zest, fruit syrup. However, the products are excellent and without any additives.
Preparation of raisins
Prepare the raisins in advance, soak the dried fruits in hot water for 15-30 minutes. Before adding to the dough, rinse the raisins under cold running water and dry on a clean waffle towel or napkins, getting rid of moisture. We don't need extra moisture in the dough.
Basic test
Next, let's do the main thing - the test. Remove margarine or butter from the refrigerator in advance so that it melts a little and becomes softer. Cut it into pieces, transfer to a convenient container and melt in a water bath.
Add sugar to the melted margarine, pour it in gradually, stirring from bottom to top. Thanks to such simple manipulations, the oil consistency gains more oxygen, becomes more airy, which means that the dough will turn out soft and porous.
Then add a few eggs to the mixture. Beat one egg at a time into the bowl, stirring thoroughly in the same movements.

Proper preparation of the ingredients, introducing more than just flour into the dough, will provide you with a truly magnificent, tasty treat.
The standard shortcrust pastry recipe for cupcakes says one and a half cups of flour, but you need to add as much flour to the dough as the dough itself takes. Therefore, when introducing flour into the mixture, add it in small portions while kneading well.
The finished dough for shortcakes should resemble thick, viscous sour cream.
If the dough seems too thin, add some more sifted flour.
Before spreading and sending the cupcakes to the oven, let the dough rest for a while, leave it in a cool place for 15-20 minutes, covered with cling film.
Baking process
Next, the dough must be laid out in molds and sent to the oven.

This will ensure that your cupcake filling stays in the middle or, in the case of chocolate, won't run out, ruining the look of the cake.
After spreading the dough, place the molds on a baking sheet or wire rack, send to the oven, preheated to 220 degrees. Keep an eye on baking, when the center of the cupcakes has risen, reduce the heat to 160.
The total baking time for shortcakes according to the recipe is 15-10 minutes, depending on the characteristics of the oven.
Feed
