Other types of test

You can make homemade biscuits with jam, the dough recipe is not needed. It is simply bought in a store (yeast, puff, yeast puff), parted (yeast - rises, puff - thaws, yeast-puff slightly rises), rolled into a layer (cake) and baked first one cake (then the food will bake faster) or together stuffed.

The recipe for homemade margarine cookies with jam is the same as with butter, you need the same amount of this product. Margarine-based pastries are more fluffy, but butter-based ones have a better aftertaste.

Dough preparation method: chop fat with flour, to which all dry foods are added, add eggs (sour cream, if available in the recipe) and quickly knead the dough, roll into a ball and refrigerate for an hour or more. Do not knead too long, the stretchy shortcrust pastry will be tough after baking.

Then everything is as always: roll out the dough (up to 1-1, 5 cm) and bake a large cake, cut it in half, spread one part with jam and cover with the other part. We press tightly to each other, then cut into pieces of any shape.

This is one of the homemade jam cookie recipes.

Variant withstreusel coated

The recipe for homemade biscuits with jam and crumbs is the same as the previous one, but the filling layer is not covered with a second cake, but sprinkled with crumbs, consisting of crumbled shortcrust pastry or streusel. It turns out very tasty.

Recipe for making streusel. Pour chopped nuts, biscuit crumbs or breadcrumbs, s alt, baking powder, grated lemon zest and sugar onto a cutting board, mix everything well. Put pieces of butter into the resulting mass, chop everything with a knife into large pieces and rub in the palms until crumbs form - streusel. The amount of streusel to cover the jam layer is at least 1/3 of the dough.

Cookie Fudge Recipes

To decorate cookies, you can use one or more multi-colored fondant glazes. Cookies can be dipped in icing, can be brushed on top.

White (protein glaze) - 2 egg whites, 200 g of powdered sugar, 1 tablespoon of lemon juice (or dry citric acid diluted with water). Sift the icing sugar through a sieve into a bowl, add the beaten egg whites and lemon juice, mix quickly. If desired, you can add food coloring to the protein glaze and make it multi-colored. After application, the glaze is dried in the oven for about 10 minutes, or in the air - about 1-2 hours.

Pink - made from powdered sugar 50 g with the addition of 2/3 teaspoon of lingonberry or cherry or pomegranate juice. Instead of juice, you can add a brightly colored liquor. Everything is quickly mixed and applied with a brush on the cookies. If the glaze is liquid, you canadd more powder.

Yellow-orange - made from a mixture of powdered sugar (50 g) with hot milk (1 teaspoon) and turmeric on the tip of a knife.

Chocolate - a mixture of 1 tbsp sour cream, 50 g chocolate and 5 tbsp sugar. All ingredients are mixed and brought to a boil, but do not boil. Apply after glaze has cooled.

Coffee - 100 g of powdered sugar, 1 teaspoon of butter and 1 teaspoon of hot strong coffee. Mix everything quickly and use immediately.

If there are food colorings, then fudge can be made from powdered sugar with the addition of strong alcohol and dye.

Remember that red wine gives the fudge a yellowish-gray-brown color. And if you want to use beet or carrot juice, you need to add a little lemon juice or citric acid to keep the color.

Preparing jam for cookies

If the jam is not thick enough, you can add potato starch to it (even up to half the volume) and heat the mixture while stirring. Liquid jam will flow out of the products, spoiling the whole look. You can throw the jam on a sieve and use only the thick part. We must remember that the chilled jam seems thick, try warming it up a bit to check its viscosity (thickness). To make the jam thicker, you can add biscuit or shortbread crumbs, ground nuts, chopped corn flakes to it.

Together with jam, you can add raisins, spices, marmalade, candied fruits (candied fruits) and nuts, or you can mix soft butter with jam and fluff the mixturecookies.

Baskets with jam and cream

Used shortcrust pastry and molds. Roll out the dough thinly, cut out circles and cover the molds with them, slightly pressing them to the edges. Bake molds upside down until golden brown. Fill the cooled baskets with jam, and then with cream. Such baskets are obtained in a size larger than molds. If you need smaller baskets, then they are baked inside molds. Any cream is used to fill the baskets: butter, custard, protein, but not very sweet, since the jam at the bottom of the mold is already sweet.

Then, rolled into a roll, cut into circles, fashioned roses and more.

As there are a great many recipes for homemade jam cookies, so you can decorate the finished product in different ways. It is only necessary to remember that the dough, stirred too long, becomes hard and tasteless during baking.
