Modified starch - what is it? This product has nothing to do with GMOs. Genetically modified starch is, in fact, impossible. Starch does not contain genes - it is just organic matter, but not a living formation. Thus, the most common modified corn starch is a modified starch, from the word "modification" - a change. Changed the properties of starch by biochemical, chemical, physical or combined processing. On the territory of the Russian Federation, about 20 types of starch are allowed for use. Each of them is used in accordance with the properties acquired as a result of the modification.

Starch modification has several directions. The purpose of one of them is to eliminate the natural smell. Despite the fact that starch itself does not have a pronounced smell, sometimes its complete absence is necessary. Such a product is used for the production of cosmetics and food. Sometimes it is necessary to change the color of the starch: as a rule, this is necessary when using it for technical purposes. Often starch is added to bulk products to give themgreat friability, and liquid to prevent clumping. For this, modified starch is used, the change of which was aimed at increasing friability.

For the production of baby powders, powdered sugar and baking powder, odorless starches are used. For technical purposes - starches with dyes. In the manufacture of mayonnaises, ketchups, sauces, creams, puddings and yoghurts, the ability of starch to swell is essential. It also allows you to enhance the taste and texture of the product when baking cakes, pastries and bakery products. The production of sausages also cannot do without starch: its ability to bind moisture is needed, and it is also much cheaper than soy isolate and especially meat. However, the abuse of this product can make the sausage tasteless, like rubber. Baby food is also not complete without starch. For example, in order to prevent separation of mashed potatoes, it is the modified starch that is broken into smaller parts that is needed, since in its normal state it is quite strong.
