It's hard to imagine a New Year's table without sweets baked by mom or grandmother. I think the recipes for winter cakes and pies below will help you please your loved ones with delicious, fluffy, ruddy and mouth-watering confectionery.
Chocolate cake
Grate egg yolks with sugar, chopped nuts and butter. Then add flour and add baking powder or quenched soda. Knead the dough, divide it into 3 parts and bake the cakes. They need to be baked at a temperature of 180 ° for at least 20 minutes. Lubricate each cake and cake with cream on top.
For the dough: 220 g margarine or butter, 3-4 yolks, a glass of sugar, half a spoonful of soda, a glass of nuts, 300 g flour.
For cream: 4 teaspoons cocoa, juice of one lemon, 4 egg whites, 130 g sugar.
This winter-style cake is decorated with Mushroom cookies, which we will bake according to the recipe below.
Cookies for decorating
For the test, take:
- glass of sugar;
- 3 cups flour;
- 2 yolks;
- 200g margarine;
- glass of sour cream;
- a little s alt;
- 1/2 teaspoon baking soda, quenchedvinegar;
- vanillin.
Flour grind with margarine, add sour cream, pounded with sugar, stir until a thick homogeneous mass. We make 40 legs and 20 hats and bake in the oven. We make a recess in the middle of each hat.
Dilute half of the sugar with three tablespoons of water and boil. Glue the halves of the legs and the hat with the resulting syrup. We put the mushrooms legs up and set to dry.
When the mushrooms are dry, beat 3 cups of sugar with two proteins until a thick mass is obtained and cover the legs and bottom of the hats with it. Dip the legs in poppy seeds and set to dry.
Now cook 2 tablespoons of milk, 4 tablespoons of cocoa, 50 g of butter, 4 tablespoons of sugar and dip the mushroom caps into the resulting mass. Arrange them around the plate to dry the caps.
When the icing is dry, place the mushrooms on the buttered winter cake and leave for 12 hours.
Lemon cake
Rub the yolks, gradually pour in the powdered sugar, then flour, grated zest and soda. The resulting mass is carefully mixed with whipped proteins. Place the dough in an oiled mold. Bake at medium temperature for 25 minutes. Cool and cut into three layers.
Beat egg whites, adding powdered sugar, and gradually add lemon juice and lemon zest drop by drop while beating.
Rub the butter until white and mix it with proteins. Lubricate the layers of cakes with this cream. Cover the top and sides of the cake with icing (grind the whites for 20 minutes with powdered sugar, add the juicelemon).
Place the glazed cake in a slightly warm oven for 10 minutes.
This buttercream-free winter cake can be topped with lemon wedge marmalade.
- Dough: 6 eggs, 250 g flour, half a teaspoon of soda, 100 g of powdered sugar, zest of one lemon.
- Cream: 3 egg whites, one lemon, 240 g butter, a spoonful of powdered sugar.
- Glaze: 2 egg whites, 200 g sugar, juice of one lemon.

Beat butter well. Then, stirring, add to it the yolks, previously ground with sugar and cocoa powder. Then gradually pour in hot milk, and at the end - liquor (if not, then you can without it). The cream is ready.
Cookies soaked in cold coffee, lay in three or four layers, each smearing with cream. Top and sides with the remaining cream and sprinkle with finely grated chocolate.
600g biscuits, 1 cup cold sweet coffee, 250g butter, 2 egg yolks, 3/4 cup granulated sugar, 3/4 cup milk, 3 tablespoons cocoa, 1 tablespoon liqueur.
Let the cake soak and serve.
Orange cake
Mix flour with softened butter, make a hole in the dough, pour warm water into it, put granulated sugar, a little s alt, mix thoroughly and put in a cold place for an hour. Ingredients: 350 g flour, 100 g butter, 6 tablespoons of water, a spoonful of sugar.
Now we make a cake 3-4 cm thick from the dough, transfer it to a greased form and put it on 15minutes into the oven at 180 degrees.
For the cream, mix an incomplete glass of sugar and half a pack of butter, add juice from two oranges, 4 beaten eggs and grated zest. Cook for 20-30 minutes, cool and grease the cake with cream. Sprinkle with powdered sugar on top, decorate with orange slices and berries. In addition, you can decorate this winter cake, as in the photo below.
Mazurka Pie
Mash two eggs and a glass of sugar. Put a glass of raisins and crushed walnuts each, then soda (a quarter of a teaspoon) and lastly a glass of flour. Mix everything thoroughly. Put the dough on a sheet greased with melted butter and place in the oven. Cut the finished pie while still hot into pieces.
Winter cake decorations
Of course, it's nice when the table is decorated with a handsome hand-made cake. True, this takes practice. It might not work the first time. First you need to master the simplest types of decoration, and then you can move on to complex patterns.

To prevent a cone at the end of the pattern, you need to raise the tip of the syringe, immediately lower it and quickly raise it again.
How do we decorate?
Winter cakes look great if they are decorated with protein drawing mass. To get 150 g of this mass, you need to take one egg white, a few drops of citric acid or lemon juice, an incomplete glass of powder and food coloring.
A few words about food coloring. Glazes, creams and other embellishments can be tinted with natural colorants. However, keep in mind that excessively bright colors cause an unpleasant feeling.
White paint gives milk, powdered sugar, sour cream, cream. Yellow is obtained from lemon peel, saffron. Saffron is also used to make sweet yeast dough, muffins, cookies, cakes, creams.
Squeeze juice from spinach to get green dye. It is advisable to add vanillin or a little crushed lemon or orange zest. Brown paint is given by coffee infusion and zhzhenka - burnt sugar. To get burnt, pour 1 tablespoon of sugar and, stirring, heat over low heat until the sugar turns dark brown and smoke appears. Gradually add, continuing to stir, half a glass of hot water and stir until the lumps dissolve. Strain the resulting sticky brown solution.
Red and pink colors are obtained by adding red wine, raspberry juice, strawberries, cranberries, cherries. Orange paint is obtained from a mixture of yellow and red paint, as well as by adding orange juice.
