- 3 yolks,
- sugar (4 tablespoons),
- 5 proteins,
- powdered sugar (15 g),
- flour (1/2 tbsp.).
Eggs are divided into yolks and proteins. Beat egg whites with a mixer until stiff peaks are obtained. Gradually add sugar and beat the mass until it becomes snow-white and homogeneous. Beat the yolks in a separate bowl with sugar. Gently mix the whites with the yolks and add the flour, knead the dough.
Spread the cookies in the shape of "fingers" and bake in the oven for about 15 minutes. Sprinkle with powdered sugar five minutes before the savoiardi is done. Next, put the cookies in the refrigerator for the whole day. The classic recipe uses yesterday's dough.
Dessert recipe
Preparing a Tiramisu cake at home is not so difficult. For this we need products:
- cottage cheese (390 g),
- 5 eggs,
- "Marsala" (145 g) (it can be replaced with cognac or rum),

- cocoa (4 tablespoons),
- coffee.

Prepare a mug of coffee and let it cool, then add alcohol. Pour the coffee mass into a wide container, as we will have to dip cookies into it. Whip heavy cream until peaks form. To facilitate the process, the mass must first be cooled. Next, add the powder and mascarpone to the cream.
We select the most convenient form and put a layer of cookies dipped in coffee on its bottom. We apply a layer of cream on it, and then another layer of savoiardi. On top of the dessert, apply a thick layer of cream. We close the dessert on top with cling film and send it to the refrigerator overnight. Sprinkle with cocoa powder on top before serving. Cherry Tiramisu

Ingredients:
- mascarpone (220 g),
- powdered sugar (85 g),
- water (210 ml),
- cream (230 g),
- coffee liqueur (45 ml),
- natural coffee (2 tablespoons),
- black chocolate (55 g),
- fresh or frozen cherries (340 g),
- vanillin,
- savoyardi (240 g).
Whip cream and add powdered sugar, mascarpone and vanilla. Mix the mass well with a blender or mixer. We brew coffee, and it is better to make natural. Add liquor to the drink and wait for it to cool.
