In Ukraine, this cake is also called "Krakow". And in Russia, the older generation probably remembers cookies that are crispy on the outside and a little viscous on the inside, which were prepared according to GOST in the Soviet Union and sold everywhere. In this article, we will try to look at various recipes for almond cakes. It's not that hard to make them. The main thing is to have a powerful blender or coffee grinder at your disposal to crush the nuts into flour.

The French macaroon is said to have been named after the sisters who invented the recipe in the late eighteenth century. Proteins from five eggs are thoroughly cooled. Mix almond flour (125 grams) with the same amount of powdered sugar. In another bowl, beat the whites (at medium speed of the mixer for ten minutes). Pour one hundred and twenty-five grams of granulated sugar into a saucepan, pour cold water (35 milliliters) and put on fire. Stirring constantly, cook the syrup. Let it boil and carefullypour into whites. Sprinkle in the sweetened almond flour. Knead the dough. It should be the consistency of sour cream. We divide it into parts, each we give color with the help of dry food coloring. On a baking sheet covered with parchment, squeeze the dough into circles of diameters of two centimeters. This procedure is repeated after another five minutes. After a quarter of an hour of cooking, take out the baking sheet. Six eggs are divided into yolks and whites. The first ones are ground with sugar (120 g) and a bag of vanilla. In another container, mix one hundred and thirty grams of ground almonds, 60 g of plain flour and a teaspoon of cookie powder. Whip the egg whites into stiff foam. We introduce bulk ingredients. Stir and add to yolks. Mix carefully. We heat the oven to 175 degrees. We grease the baking sheet with fat, spread the dough. Level the surface with a knife and bake for about forty minutes. Calcined in a dry frying pan 80 grams of almonds. We crush them into large pieces. Pour two hundred grams of powdered sugar into three tablespoons of Amaretto liqueur and two orange juice.
