- sugar - 200 gr.;
- powdered sugar – 200 gr.;
- peeled almonds – 200 gr.;
- egg white - 2 pcs.;
- lemon juice, vanilla.
Mix sugar, powdered sugar and egg whites and cook in a water bath until a thick cream, then add crushed almonds, a teaspoon of lemon juice and a couple of drops of vanilla essence. Knead the mass thoroughly (like dough) and color with food coloring whendesire. Do not wait for it to cool - the cooled mass loses its elasticity.
The second method is cold, for sculpting figures and coating confectionery. Ingredients:
- peeled almonds – 200 gr.;
- powdered sugar – 200 gr.;
- egg white - 1 pc.;
- 1 tsp fruit liqueur;
- 3-5 drops of lemon juice.
Dry the almonds in the oven for 3-5 minutes, then pass the nuts through a meat grinder and mix with protein and powdered sugar. Add lemon juice and liqueur, mix well with a spoon and pass through the press again. Wrap the finished mass in foil and leave for several days in the refrigerator.
