  1. First of all, we defrost the carcasses. And it's best to do it slowly, naturally: move the fish from the freezer to the bottom of the refrigerator, let it thaw for several hours. For cooking, we use only high-quality mackerel: no yellowness, dense.
  2. Having thawed the carcasses, we clean and cut off the heads, and then we gut them. It would be nice to cut off the tail and fins, and then rinse well.
