Next, soak the gelatin plates according to the instructions on the package. Then squeeze them and transfer them to the syrup. It is necessary that the gelatin is completely dissolved.
Using a mixer, beat the cream, mascarpone and currant syrup. Gently spread the resulting mass on the prepared dough. We send the cake to the refrigerator overnight. Knead the dough from flour, sugar, cold water and s alt. It must be thoroughly kneaded with your hands, then rolled into a ball and wrapped in cling film. Cover the mass with a towel on top and leave to infuse at room temperature for forty minutes. After the specified time, we again punch the dough and divide it into three parts. We roll each of them into a layer 1-2 centimeters thick.
We thoroughly wash the berries and remove unnecessary twigs and debris. Next, cover the currants with sugar and leave it for forty minutes. During this time, the berries will have time to release the juice. After we shift the currants into a colander so that excess moisture is gone. Mix berries with starch.
From the prepared dough, cut out circles of the same size using any shape (you can even use a glass). Put some berries in each blank, add sugar and fasten the edges of the dough. When all the dumplings are ready, put a pot of water on the fire. Bring the liquid to a boil, then lower all the dumplings into it one by one. After they float to the surface, boil them for a couple more minutes.
Serve dumplings on the table with sour cream and sugar.
