The trivial recipe turned out to be very popular - today tiramisu is known all over the world, it has already become a household name. Along with the initial set of products, alternatives began to appear: fruit tiramisu, vegetable, vegan, dietary … The latter option is extremely popular, since the calorie content of tiramisu (classic version) is considerable - 310 kcal per 100 grams. Mascarpone cheese provides most of it because of its fat content. In this article, we will show you how to prepare a basic dessert and its lighter variation.

That's how the word "tiramisu" sounds in Italian. As planned, the dessert turns out to be loose, moist and airy - it is extremely difficult to cut it into portions, as it will spread. If aesthetics is important to you, then we recommend preparing treats in portioned bowls. And yes, raw eggs are used in the recipe. Please wash them thoroughly with baking soda before use:

  • eggs - 5 pieces;
  • sugar - 5 tbsp. spoons;
  • strong coffee - 210 ml;
  • "Mascarpone" - 375 grams;
  • fragrant alcohol - 5 tbsp. spoons;
  • Savoiardi cookies - 45 pieces;
  • cocoa powder - to taste.

Cooking tiramisu

The calorie content of such a dessert is quite high (see above), but occasionally you can afford such a pleasure.

Separate the whites from the yolks. Beat egg whites with a pinch of s alt until stiff peaks. In a separate bowl, beat the yolks with sugar - the mass should turn white and increase in size by 3-4 times.

Mash the mascarpone and stir it into the yolks, stirring until smooth. At this stage, you can use a mixer. Carefully add whipped egg whites to the yolk-cheese mass, kneading from the bottom up. Take care of the airiness of the cream, do not be zealous. Since you have allowed yourself tiramisu (of course, you remember the calorie content), then it should be perfect not only in taste, but also in texture.

Mix chilled coffee and alcohol in a separate bowl. Lubricate the bottom of the portion molds with a small amount of cream. Soak Savoyardi sticks alternately in coffee, leaving them in the liquid for 2-3 minutes - they should be completely soaked, while retaining their shape. Spread cookies on top of the cream in molds as tightly as possible. Brush the Savoyardi with half of the cream. Repeat the procedure with soaking and laying out cookies. Place the remaining cream on top and sprinkle generously with cocoa. Refrigerate overnight.

Alternatives

Tiramisu has a very rich and at the same time delicate taste, but the monotony can get boring. Also, many will not dare to eat eggs without heat treatment. Pay attention to the following tips:

  • coffee with alcohol can be safely replaced with fruit juices. You can also make a lemon-strawberry tiramisu if you like: add a little lemon curd to the cream, soak the Savoyardi with a mixture of syrup and Limoncello liqueur and add a couple of layers of chopped fresh strawberries;
  • if you want to get a portioned tiramisu cake, the calorie content of which per 100 grams will be similar, then add 5-7 grams of gelatin, previously diluted in 50 grams of cream, to the cream;

  • replace eggs in dessert with a mixture of whipped cream (250 grams) and egg yolks brewed in syrup (3 yolks + syrup of 90 grams of sugar and 40 grams of water). This is a safe recipe for tiramisu, except that the cream will increase the total calorie content by about 80 kcal.

Easy tiramisu cake

The calorie content of this dessert is 160 kcal per 100 grams. Plus, due to cottage cheese, the dish is rich in protein and calcium. This recipe makes a really delicious cake. Try it and you won't regret it!

Biscuit:

  • eggs - 6 pieces;
  • flour - 116 grams;
  • sugar - 60 grams;
  • stevioside - 5 grams;
  • strong coffee - 30 ml;
  • instant coffee - 10 grams.

Impregnation: strong coffee - 80 ml.

Cream:

  • stevioside - 3 grams;
  • vanilla extract - 1 tbsp. spoon;
  • soft fat-free cottage cheese - 400 grams;
  • cream with a fat content of at least 33% - 250 grams;
  • cocoa powder.

Cooking

Get some biscuit. Preheat oven to 180 degrees, line baking sheets with baking paper.

Mix liquid and instant coffee. We do not recommend removing sugar completely - this tiramisu cake has a low calorie content, and sugar serves to additionally stabilize the eggs.

Separate the whites from the yolks. Beat egg whites with a pinch of s alt until fluffy peaks. Whisking constantly, add sugar and stevioside. Add yolks one at a time. The mass will be thick and shiny. Stir in coffee and sifted flour. Mix gently until smooth.

Shape the biscuit dough into 3 circles with a diameter of 22 cm and bake until done. This will take approximately 15 minutes. Cool the cakes completely.

For the cream, beat the cream to a strong peak, add the stevioside. Stir in cottage cheese and vanilla extract.

Now assembly. Put the first biscuit in a 22 cm diameter mold, soak the coffee. Spread 1/3 of the cream on top of the biscuit. Press with a second biscuit, soak again. Spread another 1/3 of the cream. Press with the remaining biscuit, soak. Spread the remaining cream and sprinkle generously with cocoa. Let sit in the fridge overnight and you're good to go.
