Everything rests on a big misconception: many recipes for vegetable pizzas can outperform any meat pizza, especially considering that meat is often replaced with dubious sausages. Plus, making veggie pizza is easy: all you need is ready-made or handmade yeast dough, seasonal vegetables and some greens.

Ingredients

So, for the eggplant and tomato pizza recipe you will need:

  • pizza dough;
  • 1 eggplant;
  • 0.5 kg tomatoes;
  • 1 sweet pepper;
  • 5 sprigs of basil;
  • 50g Parmesan;
  • 150g mozzarella;
  • 1 onion;
  • 1 tbsp l. capers;
  • 2-3 green onion stalks;
  • oregano, s alt, sugar, wine vinegar.

In the preparation of any pizza, one should not forget about tomato sauce - this is an indispensable component of this Italian dish, even if it is a vegan pizza. You don't need a lot of sauce, and you shouldn't immediately rush to ketchup or a can of tomato paste: homemade tomato pasteit will be tastier and he althier. To do this, only fresh tomatoes are needed: they need to be scalded with boiling water, peeled and get rid of the seeds. Grind the pulp with a blender to a puree state, where we add a teaspoon of sugar, as well as s alt and pepper to taste. Next, the sauce is stewed under the lid until it becomes thick enough.

Peel the onion and cut into thin strips, add wine vinegar to it and leave to marinate for about an hour. In the meantime, cut the eggplant into thin circles and fry in vegetable, best olive oil, until golden brown. You can sprinkle the eggplant with s alt.

Sweet peppers should be baked so that the outer skin comes off easily. The seeds are removed, and the pulp is cut into strips. Finely chop the greens and green onions (only feathers). Cut the remaining tomatoes into thin slices.

Next, sprinkle the dough with chopped basil sauce: it is better to put the greens underbottom, and not sprinkle on top, because during baking, the greens dry out at once and can even be charred, which definitely does not contribute to a pleasant taste.

The next layer is fried eggplant. We spread them evenly over the entire pizza: it is better to press them a little to the dough, as if slightly pressing, but not too much. Rinse pickled onions with cool water to get rid of the vinegary taste. We also spread the washed onion over the entire surface. Sprinkle a couple of pinches of dried oregano on top of the pizza. Now it's time for the roasted pepper strips - it will add tenderness and piquancy to the dish.

It's time to complement pizza with the main element - cheese. We take out the mozzarella from the brine and three on a coarse grater. Some veggie pizza recipes call for sliced mozzarella on top of the pizza, but this will melt the cheese and leave large spots. The grated cheese will be evenly distributed over the pizza. A soft mozzarella in the middle of the pizza creates a mouth-watering tenderness and gooey strings of cheese that everyone loves so much.

It remains only to lay out the slices of tomatoes beautifully, then sprinkle the pizza with finely chopped onions and capers.
