How is it done?
Preheat oven to 175°C. Place all ingredients in the bowl of a food processor (using the mixer element) and blend for one to two minutes to combine everything. When all the ingredients are combined, they will look like a liquid mixture. But as the flour absorbs the liquid, it swells and the dough begins to slowly thicken. If the mixture sticks to the sides of the bowl, remove the lid and use a spatula to scrape it off. Once all the ingredients are well mixed, you should have a thick, sticky dough.
Line a 26 cm baking dish with parchment paper. Remove the sticky dough from the bowl of the food processor and place it in the prepared pan. Wet your hands with water to keep the dough from sticking, then use your palm and fingers to spread it evenly across the bottom of the pan and around the edges. This is a bit of a tricky process, so just take your time and spread the mixture evenly. Once you're sure the base is fairly level, use a fork to poke a few holes all over.
Place the mold in the oven on the middle rack for 25 minutes. The product will be ready when its edges turn golden. Take out ofoven and let cool before removing the parchment paper. This will give you a finished diabetic pie base.

Pour the liquid stevia extract over the mixture. Stir again, add some water and cook the apples over low heat for five minutes. Remove the pan from the heat.
Place the first batch of dough into the base of the baking dish. Press it to the bottom and edges. If you are using a pre-formed base, you can skip this step. Put some stuffing in it. Decide whether you want to add a second batch of dough on top or bake an open diabetic diet cake.
If you like, place a second layer of dough on top. Squeeze the edges to seal the filling inside the product. Be sure to cut a few slits at the top to allow air to flow into the stuffing as well as steam to escape during cooking.
To decorate a cake, you can do the following. Roll out the second piece of dough into a thin layer. Put it in the freezer for a while directly on a baking sheet or a sheet of parchment paper so that it is no longer soft and sticky. Bake for ten minutes at 200°C, then reduce the heat to 170°C and continue to bake the cake for one hour (or until the middle is no longer liquid). If the edges of the dough start to burn, cover them with foil.
