This drink appeared quite recently, at the very end of the 1990s. In the Moscow coffee bean coffee shopmetro station "Kuznetsky Most" was a regular named Rafael. He asked the barista to make a drink with a mild taste, vanilla flavor and moderate sweetness. To please a regular visitor, the staff tried their best. So the drink got its name. It soon became known simply as "raf" for shortening.

This coffee cocktail gained popularity in the countries of the former Soviet Union. Baristas taught their colleagues from other coffee houses how to cook raf. So the drink became popular in Belarus, Ukraine, Moldova and Kazakhstan. In Western Europe, there is (and has been for a long time) its own rough coffee (pronounced “raf”). But this black drink is brewed from coarse coffee for those gourmets who like intense bitterness and great strength. The Russian cocktail is gentle and sweet. There is no hint of bitterness in it. The classic cocktail was soon made with numerous variations. One of them is orange raff. But gourmets also diversified its basic recipe with numerous versions. How to cook classic raff

Just the cooking method. In cappuccino, espresso is prepared separately and poured into a cup. Milk or cream is whipped and added at the very end, forming a cap. And in the classic raf, all the ingredients are mixed in a coffee machine pitcher or (at home) in a mixer and whipped together.

This method of preparation allows the ingredients of the cocktail to "get married", enter into a strong connection. The orange raff recipe differs from the classic one only by the addition of a citrus component. But it is also mixed with other ingredients at the very beginning of the preparation of the drink. Ingredients for the drink

One standard serving of orange raff (180 milliliters) requires one shot of espresso. As with cappuccino, you will need twice as much milk as coffee. Based on the fact that a shot is 50 ml, we take half a glass of cream. The last product should not be too greasy. Eleven percent will be just right. If the cream is more fatty, it is recommended to slightly dilute it with boiled water. We also need two types of sugar: regular and vanilla, both 5 grams each (a small spoon each).

Some recipes suggest taking orange instead of regular sugar. Make it very easy. It is enough to drop orange syrup into granulated sugar. And finally, we need the juice of this citrus. Tastierthe drink will be made from freshly squeezed orange. But juice from a pack is also suitable. To decorate a cocktail, you can use cinnamon (1 gram). The seasoning will make the hat appetizing and add piquancy and astringency to the taste of the drink. You can decorate the edge of the cup with a circle of citrus.

Orange Rough Coffee Machine Recipe

First we make espresso. Already at this stage, we need to decide how we will serve the coffee cocktail. Raf, since it is considered a subspecies of cappuccino, is poured into medium-sized porcelain cups. But there is another way to serve - in tall glass glasses with a small handle, like for latte. In this case, double the espresso from one shot to two shots.

  1. Pour cream, coffee and orange juice into the pitcher.
  2. Add two types of sugar.
  3. Beat with a cappuccinatore until a thick, dense foam is formed.
  4. Warm up a cup or a glass goblet. Pour the prepared orange raff. As you can see, a small amount of citrus juice did not ferment the not very fat cream. The mass turned out homogeneous.

  • Turk or French press,

  • mixer or simple whisk.

First of all, let's make coffee. For such purposes, it is better to take a good Arabica of elite varieties. The taste of coffee brewed in a cezve is greatly affected by the quality of the water. What flows from our taps gives the drink a metallic and not-so-pleasant accent. Everyone knows how to make coffee in a French press. But making a drink in Turkish is an art.

  1. So, put 4 teaspoons of ground coffee into the cezve.
  2. Pour 150 ml of cold water.
  3. Immediately put the required amount of regular sugar.
  4. Put the Turk on fire.
  5. As soon as the foam rises, raise the cezve over the burner. As soon as the foam lies down, we immediately return the Turk to the fire. So repeat three times.
  6. Ready coffee must be strained.
  7. Heat the cream in a saucepan to 70 degrees. This can also be done in the microwave.

There are two ways to prepare orange raffe with chocolate. First, classic: mix all the ingredients in a pitcher (or saucepan) and whisk.
