First Bean Course: Stewed Bean Soup with Meat

Required ingredients:

  • 2 cups white beans;
  • 1 onion;
  • about 300 grams of beef or pork;
  • 2 tbsp. tablespoons butter;
  • 3 tbsp. spoons of tomato paste or a few fresh tomatoes;
  • s alt, spices and herbsto taste.

Cooking

  1. Sort the beans and soak for 5-10 hours.
  2. Cut the meat into medium pieces, pour cold water (3-4 liters) and bring to a boil, removing the foam. Reduce the heat and simmer the meat broth for 30-50 minutes (depending on the stiffness of the product).
  3. Drain beans and pour into boiling soup.
  4. Cut the onion into cubes and fry until light golden brown. Pour the tomatoes or tomato paste, slightly diluted with water (1: 5), crushed through a meat grinder into a pan, let the mass stew for 5-10 minutes. Then put the roast in a boiling broth, s alt to taste. Optionally, you can add potatoes to the dish, slightly reducing the indicated amount of beans.
  5. After 30-40 minutes of boiling, taste the grains for softness. If necessary, continue cooking until the beans are done.
  6. Spice up with spices and herbs.

Second bean course: bean stew

Required ingredients:

    1 cup white beans;

  • about 200 grams of smoked brisket or sausage;
  • 1 onion;
  • 1 carrot;
  • 3-4 fresh tomatoes;
  • 2 celery stalks;
  • 4-5 medium potatoes;
  • 1 bell pepper;
  • 2 garlic cloves;
  • 2 tbsp. tablespoons vegetable oil;
  • 1 tbsp a spoonful of grated hard cheese;
  • s alt and seasonings to taste.

Cooking

  1. Pour cold beanswater and leave for at least 2 hours. Then rinse again and put to boil, pouring broth so that it has 3-4 centimeters of liquid.
  2. Onions, tomatoes, peppers, carrots, celery cut into cubes and fry in a deep frying pan. Do not mix all the vegetables at once. Follow this sequence of adding products to the total mass every 2-3 minutes of cooking - onions, carrots, peppers, celery, tomatoes. S alt the resulting thick mixture a little and leave to simmer until it thickens.
  3. After 30 minutes of cooking the beans, add the diced potatoes and brisket to the pot. After boiling, add vegetable dressing to the stew.
  4. Cook the dish until the potatoes are ready. Season and s alt to your liking.
  5. Before turning off the fire, add finely chopped garlic, stir and sprinkle with grated cheese. Serve the bean dish hot.
