For about a month, the contents in a glass container are placed in a secluded place. After the expiration date, the resulting drink can be poured into sterile jars. If necessary, at this stage, a little sugar can be added to the fermented mass. After that, the prune wine must be put again in a secluded place for a period of 30 days. You need to start creating an alcoholic drink with sourdough. In this recipe, the sourdough will be infused on raisins. To do this, put unwashed raisins in a jar, then pour 1 tablespoon of granulated sugar inside and pour a glass of water. Mix the contents and cover with gauze. Then, for about 4 days, the leaven is left in a secluded place. When the contents are ready for the next step, a characteristic odor will appear and foam will form on the surface.

The next step is to prepare the prunes. It must be washed well and all the bones removed from the inside. After that, dried fruits should be poured with 4 liters of boiling water and left under the lid for an hour.

After the allotted time, the resulting infusion can be poured into a glass container, and the dried berries can be crushed with a meat grinder or blender. Then the resulting gruel from prunes should be mixed with infusion. Add 1 liter of water and 0.5 kg of granulated sugar to it. Also, inside the contents, pour the resulting sourdough on raisins. Then mix everything and cover with cheesecloth. The resulting fermentation product must be put in a secluded place for about 5 days. Already after 1 day, characteristic signs will appear, by which it will be possible to determine that the fermentation process is underway. This is the presence of a characteristic sour smell and hissing foam on the surface. In order for the prepared alcoholic drink not to turn sour, it must be stirred 3times a day.

After 5 days, the wine can be filtered, squeezing every last drop out of the pulp. Then you need to add 0.25 kg of granulated sugar to the drink, mix and pour everything into a container for further fermentation. The main rule to consider during this procedure is that the bottle should not be filled to the end, but leave a little space for foam to form. You need to put on a glove on the neck (previously pierced in one place) and put the container in a secluded place where the temperature will not exceed 25 ° C.

After another 5 days have passed, add another 0.25 kg of granulated sugar to the fermentation product and mix the contents. In terms of time, the whole process takes about 45 days.

How to tell if a young wine is ready?

An alcoholic drink is ready to drink if its color has become lighter, the glove no longer inflates, and a small sediment has appeared at the bottom of the bottle. As soon as the fermentation process has come to an end, the resulting young wine must be drained without sediment into another container for maturation. Now it needs to be topped up to the edges of the bottle (so that there is no space for air), without being afraid of a place for foam to form. And be sure to close.

Young wine must fully mature at 15°C for 3-4 months. If the drink is left for a longer time, its taste will become more intense.

In the event that a sediment of 3-4 centimeters forms at the bottom of the container, it must be eliminated by pouring the alcoholic drink intoanother bottle. A young wine will be ready to drink when the sediment stops forming. Under all storage conditions, this drink does not lose its properties for about 5 years.
