3. Bottles with kvass “ripen” already in the refrigerator. Important: you should leave a place for fermentation, i.e. do not top up the container to the top by 5-7 cm.

Quick kvass

Ingredients:

- 100g pressed yeast;

- 2 whole lemons (2 tsp citric acid);

- 3 large spoons of chicory;

- 600g sugar;

- 10 liters of water.

Cooking:

1. All ingredients are added to a large tank of warm filtered water.

2. The lemon is washed, carefully chopped (you can use a grater), wrapped in gauze and also lowered into a container of water.

3. We put the container in a warm place for 3-4 hours. Just that much, no moreno less, kvass from chicory should be infused. Both citric acid and dry yeast can be added optionally: add a little more of them for extra sourness and enhance the fermentation process.

4. The maturation of kvass is greatly enhanced in the bright sun, where you can take the bottles out for a short time, so as not to get mash as a result.

Red kvass

Ingredients:

- 1 lemon and 1 tablespoon citric acid;

- 10 drops mint extract;

- 50g chicory;

- 400g sugar;

- 100g yeast;

- 5 liters of cooled boiled water.

Preparation is similar to the previous recipe:

1. We mix all the ingredients, add lemon, mint extract and the right amount of citric acid, pour water.

2. A distinctive feature of this recipe is that chicory kvass ripens here already poured into bottles (do not add them to the top by at least 5 cm), and then the container is placed in the refrigerator.

3. Whether kvass is ripe can be checked by pressing the bottles with your finger: if the plastic does not sag, then the drink is ready. The next day, you can already drink a little spicy and tingling kvass from chicory. According to Bolotov, the drink is made somewhat differently.

- 15g sour cream.

Cooking:

1. The celandine is placed in a gauze bag (preferably with a load, so as not to float up), placed in a jar, pour sugar on top and pour the whey.
