In the event that, of course, they are very dirty, you can’t do without “washing”. Then do it as quickly as possible and under running water. And if they look clean, champignons just need to be wiped with a kitchen towel or damp towel. And they still gettastier!

The recipe is especially useful if unexpected guests are on the doorstep, and you need to build a tasty and fragrant "on-duty" dish. For him, we need: a kilo of small champignons, s alt, a glass of flour, vegetable oil for frying.

How to cook

  1. Mushrooms cut in half and s alted. If you come across large specimens, then you can cut into several more pieces. The idea is for the pieces to fry as quickly as possible.
  2. Pour oil into a large frying pan and heat well until almost boiling (you can also use deep-frying, as for french fries).
  3. Dip the pieces of mushrooms in flour and throw into the oil. Periodically turn over with a spatula to brown on different sides (the process takes 5-7 minutes).
  4. So our champignons are ready. We fold the fried mushrooms on a napkin so that the excess fat is stacked. Spread onplate and you can serve it to the table!

This is one of the most popular ways of cooking mushrooms in the post-Soviet space. They are first fried with onion and garlic in vegetable oil.   1. Wash and clean potato tubers (it is best to choose varieties with pinkish skin, they are most suitable for frying). We cut the potatoes into strips (or cubes, or slices - as you like, the main thing is that they can be well fried in oil). We immediately place them on a spread kitchen towel or cotton napkins - this is to remove excess moisture.
  2. Pour vegetable oil into a frying pan and heat it well. We put the potatoes cut and dried on a towel in the oil. We try not to pile too much into the container. Otherwise, the root crop will be stewed, not fried. Better then (if your frying pan is too small) do a few sets.
  3. While the potatoes are fried, you need to stir constantly so as not to burn.
  4. And now we take the second pan (well, or we perform this step after the potatoes are fully cooked). Fry finely chopped onions in preheated oil. The process will last no more than 3-5 minutes.
  5. Mushrooms cut into slices or cubes, or plates (according to your personal preference). Add the mushrooms to the onions in the pan and fry, stirring constantly, over a fairly high heat - 10-15 minutes. During this time, they will brown and give a great flavor throughout the kitchen!
  6. In one dish we shift potatoes and onions with mushrooms. Stir gently and cook for another 2-3 minutes. Tip: do not allow extinguishing and in no casecover the almost ready dish with a lid. Otherwise, we lose the golden crust, and the potato will fall apart when it is eaten.
  7. Champignons with potatoes are ready. You can also set the table. We serve the food in a large bowl, put it in portions for each of the participants in the feast, as an independent second course. You can sprinkle with fresh chopped herbs. And traditionally potatoes with mushrooms are served with a variety of pickles (especially in winter): sauerkraut, zucchini and cucumbers with tomatoes.
