Mocha coffee is one of the varieties of the popular Arabica variety, grown in the Yemeni lands in the Moho province and named according to the territorial affiliation. The Yemenis prepared coffee for consumption by the dry method, that is, they dried the beans in the sun. And only then did the goods fall into the hands of visiting merchants - since the secrets of the growth and preparation of grains were kept in the strictest confidence. No foreigner was allowed to visit the coffee plantations. Also, the authorities strictly monitored that not a single grain of the drink fell into the hands of foreigners before processing. But one Muslim wanderer, Baba Budan, managed to take several Mocha coffee beans out of the country. Coffee has ceased to be the prerogative of Yemen. The name of Baba Budan "remained for centuries" for the coffee magnates of India and Holland. These grains were transportedpilgrimage to Chikmagalkhur (South India), where they gave rise to coffee planting, production and export of Mocha coffee by this country.

A few decades later, Dutch entrepreneurs took coffee beans from India and established their plantations on the islands of Sumatra and Java. Thanks to the advertising, transport and marketing services of the East India Company, within a few years, Holland was reputed to be the world's main supplier of Mocha coffee. Since that moment, the general economic level in Yemen has fallen, but coffee is still grown there, although it is valued all over the world for its exclusive qualities. The taste of this drink is very diverse and directly depends on the location of the plantation on which the plant grows. It can be: floral, mushroom, fruity, nutty, cheesy and caramel, but always with a velvety chocolate intonation.

In addition to the designation of the coffee variety, "Mocha" refers to one of the ways to prepare this drink, which can rightfully be called a hot cocktail.

Classic Mocha Recipe

Ingredients: 7g ground coffee, 100ml water, 50g chocolate, 50ml milk, 50g whipped cream.

Espresso is prepared in the coffee machine, chocolate is melted in a hot bath, cream is whipped in a blender into a steep foam, milk is slightly warmed up. Next: chocolate is poured onto the bottom of a heat-resistant glass, on top of which milk is carefully poured over a bar spoon, the prepared espresso is poured using the same spoon. Layers must not be mixed. At the end, or the so-called “cap”, whipped cream is placed in a glass, which is sprinkled with fine chocolate chips.

Based on the hot Mocha coffee cocktail, confectioners came up with the Mocha cake, a cream in which the taste and ingredients are similar to the drink. These recipes are inspired by Yemeni coffee, which has an unforgettable chocolate palette of flavors.
