One of the most delicious oriental sweets is sherbet made from sugar, nuts and dried fruits. Many confuse this sweet dish of the East with the similarly named fruit dessert "sorbet", which in different countries sounds like "sorbetto", "charbet", "sorbet". But these are completely different sweets both in texture and taste. This article provides a recipe for sherbet, known to many since childhood and loved along with baklava and gozinaki, as well as a recipe for fruit sorbet, popular in Europe. The first is good for winter, the second is good for summer.
Sherbet in the best traditions of the East
Traditional oriental sherbet is very sweet and quite high in calories. It is delicious to drink it with hot tea or black coffee, warming up on a cold winter evening. Its firm texture and long shelf life allow it to be taken on the road as a sweet andhearty snack.
Recipe 1. Powdered milk sherbet
We offer you to choose a sherbet recipe to your taste. At home, you can cook sherbet in two versions. Let's start with the traditional. First, you need to dry 200 grams of nuts in the oven, it is best to take peanuts or walnuts. Then grind them with a rolling pin, but not too finely. In a cauldron with a thick bottom, melt 100 grams of sugar and add 350 grams of water to it, boil, add another 600 grams of sugar and a little vanillin. When the sugar is completely dissolved, put 50 grams of butter in it, mix and remove from heat. We mix sugar syrup with 500 grams of powdered milk and chopped nuts. Put the resulting mass on a baking sheet covered with parchment. Sherbet hardens quite quickly, so try to quickly smooth it with your hands and cut it, as later the finished sweetness will have to be pricked.
Recipe 2. Delicate sherbet with condensed milk
And here is another recipe for sherbet - with condensed milk. Boil 100 grams of sugar with 50 milliliters of water, add a little lemon juice, 100 grams of condensed milk, the same amount of butter and walnuts. Boil the sherbet for 20 minutes, transfer to convenient molds and cool slightly, then put in the freezer to harden for about an hour. The classic sherbet recipe can be slightly supplemented. For example, by adding cocoa powder, you get chocolate sherbet, while replacing walnuts with hazelnuts or cashews, you will change the usual taste of your favorite sweet.
Refreshing fruit or berry sherbet
If it's hot in the yard, then instead of oriental it is better to give preference to fruit sherbet. It needs very few components: fresh fruits or berries, sugar and lemon juice. To make sweet strawberry sherbet, take 500 grams of ripe berries, remove the ponytails. Grind the berries in a blender. You should have a smooth puree. A sieve can be used if necessary. Mix berry puree with 100 grams of sugar and 5 tablespoons of lemon juice, transfer to a bowl and put in the freezer for 5 hours. Then take it out, beat the mixture in a blender again (then the sorbet will turn out more tender) and put it in the freezer for another 2 hours. Serve berry or fruit sherbet by scooping it into bowls with an ice cream scoop and garnishing with a sprig of mint or fresh berries.
Every sherbet has its time
Here are such different, but delicious sherbets you can cook at home. If after a winter walk you want to warm up with tea with something sweet, then the oriental sherbet recipe is at your service, but if you want to get a breath of freshness on a hot summer day, then prepare a cooling fruit sherbet from what ripens in the beds. Agree, every season, like every dessert, has its own charm.
