  6. Add 50 ml Cointreau liqueur.
  7. At the end, add citrus zest and mix everything thoroughly. You have to be careful with the peel. Three on a fine grater only the colored part, do not touch the white, it will give bitterness.
  8. Add the zest to the dough and mix everything thoroughly.
  9. Put the savoiardi cookie dough into a piping bag fitted with an elongated thin nozzle and squeeze out small strips of dough onto a baking sheet.
  10. Leave the cookies to "rest" a little (about 5 minutes), then sprinkle them with powdered sugar. You can use a strainer for this.
  11. Bake at 200 degrees for about 12 minutes until the cookies are lightly browned.
  12. Cool it on a baking sheet for five minutes, then transfer to a wire rack to cool completely.

Savoyardi cookies are best stored in a sealed container. This way it will be dry and crumbly.

Next, you need to separate the whites from the yolks. We put the proteins in the refrigerator. Beat the yolks with a mixer with powdered sugar until a light yellowish tint and a silky texture are obtained.

Put mascarpone cheese into the egg mass and use a wooden or siliconewith a spatula, mix everything until a homogeneous mass is formed.

Next, beat the egg whites with a pinch of s alt until stiff. S alt will help to do this much faster and better. Instead of s alt, you can add a couple of drops of lemon juice.
