Such a craft as winemaking has been flourishing in Abkhazia for a long time. It is even believed that Abkhazian wines were produced even before our era. Skillful traditions of wine making were passed down from one generation to another, they can rightly be called centuries old. Many varieties of grapes are grown only here, in places with a favorable subtropical climate. Abkhazian wine in each specific region of the country differs from wines in other provinces.
The individuality of the varieties is due to the fact that the species once imported into the country were mixed with local varieties such as "auasarhua", "kachich", etc. As a result, we got wines that are not produced anywhere else, although they have well-known and common names, for example: "Chkhaveri", "Isabella", "Aligote". Numerous excavations allow us to judge the antiquity of winemaking in Abkhazia. In their course, earthenware vessels were found in which wine was placed forfurther fermentation. They were used about 8,000 years ago. Similar traditions of making wine are still alive, but this method is mainly used in the household.
A few words about technology
Abkhazian wines are now mass-produced using the latest technologies. The grape harvest, depending on the varieties, takes place from October to December. Then the collected clusters are crushed and left in a wooden trough for 3-4 days for fermentation. After that, the contents are poured without any additives into barrels or ceramic amphorae for subsequent aging. Abkhazian wines play a significant role in various festivities. For example, on New Year's Eve (celebrated according to the old Christian calendar from January 13 to January 14), from the evening of January 13, an amphora of wine is opened, a delicious table is set and a goat is necessarily slaughtered. The variety of wine varieties in Abkhazia is amazing.
Each area of this country boasts its own variety. The most favorite wine is from the provinces of Lykhny, Garp and Achandara. You can buy Abkhazian wine in any corner of the world - it is so famous and popular. One of the factories engaged in the industrial production of wine is the Sukhum winery. In 1999, it was reconstructed and equipped with the latest equipment. Now he produces about 2.5 million bottles a year. Abkhazian wines regularly receive the highest awards at Russian and international exhibitions. An excellent combination of price and quality helps them to remain in demand. Wine can be purchased both for the table, and as a gift - for example, buy a wonderful bottle in a souvenir box made of persimmon wood.
