Hanos, or milkfish, is common in Philippine cuisine. It mainly lives near the islands of the Indian and Pacific Oceans. This oily fish has a very good taste. It can be fried, boiled, baked and stuffed. Here are some recipes for how to cook milkfish.
Fried fish
In order to fry khanos deliciously, you will need:
- milk fish - 2-4 fillets;
- garlic - a few cloves;
- lemon or lime juice - 4 table. spoons;
- soy sauce - 4 table. spoons;
- pepper, s alt;
- olive oil.
Cooking milkfish
1st step
Peel the garlic from the peel and chop in any way. In a small bowl, combine the garlic, soy sauce, s alt, pepper, and lemon juice for the marinade. Beat the resulting mass with a whisk. You should get a stable emulsion. Put the hanos fillet in a bowl and pour over the marinade. Make sure the fish is covered with sauce on all sides. Cover the containercling film or lid, refrigerate. Milkfish will marinate best if you leave it overnight, but you can limit it to a few hours.
2nd step
For frying, use a heavy frying pan with a thick bottom. Heat up the oil in it. Remove the fish from the marinade. Pat lightly with paper towels or towels. Too wet fillets will not allow a crispy crust to form. Once the oil is hot, place the fish pieces in the skillet. Milk fish is fried for 5 minutes on each side. It is best served with a side dish of rice and vegetables.
Tip
If you can't find dairy fish, you can try replacing it with mullet. However, you are likely to lose a bit of flavor, as hanos has a delicate, sweet flavor that sets it apart from other fish.
Stuffed Hanos
Cook stuffed milkfish. For this you need:
- two whole hanos fish carcasses;
- soy sauce, lemon juice - two tables each. spoons;
- medium onion;
- garlic;
- bell pepper - 1 pc.;
- 100 grams (half a cup) green peas, canned;
- a third cup of raisins;
- egg fresh;
- breading (or breadcrumbs);
- olive oil;
- corn starch.
Cooking technology
1st step
The fish needs to be gutted, dried. Scoop out the flesh of the milkfish with the sharp edge of a spoon.transfer it to a bowl. Add lemon juice and soy sauce to it. Stir, cover with cling film and marinate.
2nd step
Heat the oil. Saute garlic and onion in it. As soon as the vegetables become translucent, add the minced fish to them. Fry the mixture for 5 minutes. Stir. S alt, add pepper. Put in minced peas, washed raisins. Peel the bell pepper, cut into small pieces. Add to vegetables. Mix everything, taste for s alt. Fry no longer than 3-4 minutes. Then leave to cool.
3rd step
Stuff the skin of milk fish with stuffing. Using kitchen (or regular) thread, sew up the edges. Lightly coat the carcass in corn starch. Wrap the hanos in foil, place in a baking sheet or tin and place in the oven for 20 minutes. The temperature is 220 degrees. After that, unfold the foil and hold the fish in the oven until golden brown.
