Undoubtedly, the whitecurrant is less common than the black or red variety of this berry. But it can often be found in the areas of true connoisseurs of this fruit shrub. By its qualities, white currant is very different from black, but similar to red. The difference between them is only in the color of the berries and the more sour taste of the latter, and the rest of the properties are the same.
The composition of this berry is impressive. It contains a lot of organic acids and pectin substances, which help to eliminate toxins from the body. Whitecurrant is used in cooking. It is added to pastries, sauces, desserts, compotes and jams are made from it.
White currant compote
The recipe for compote is very simple. For 600 grams of white currant, you need to take 400 ml of sugar syrup.
Berries must be ripe, freshly picked and undamaged. To begin with, the currants should be sorted out, separated from the brush, rinsed well and carefully, put in a colander and let the water drain.
Then you need to make sugar syrup. For 700 ml of water, 300 grams of sugar is required. Add sugar to boiling water and stir. When completely dissolved, remove the pan fromfire. We put currants in pre-sterilized jars and pour hot syrup over them. Banks with a volume of a liter should be sterilized for twenty minutes, and half-liter jars for fifteen minutes. We immediately close the jars with boiled lids, turn them over and leave to cool.
White currant jam
Now let's look at how to cook white currants. To do this, we need the following products:
- berries - one and a half kilograms;
- sugar - 4.5 cups.
Jam from a berry such as white currant is cooked as follows. As for compote, we thoroughly wash the fruits and leave them in a colander so that the water is glass. Then, using a juicer, we make juice. Cake can be put in a sieve. This will drain the remaining juice. Pour it into a saucepan and add sugar. We put the resulting mixture on the stove and cook, stirring occasionally with a wooden spatula. When the jam begins to boil, remove the foam from it and cook a little more. It turns out quite a beautiful and tasty dish. Pour the finished jam mass into sterilized jars, close the lids and put away for storage.
White currant pie

- cottage cheese - one hundred grams;
- flour - one and a half cups;
- egg - 1 piece;
- ground almonds - 50 grams;
- butter - one hundred grams;
- s alt - a pinch.
For stuffing:
-sugar - 3 tablespoons;
- yolks of three eggs;
- vanillin - 1 sachet;
- sour cream - two hundred grams;
- white currant - two hundred grams.
First knead the dough with flour, almonds, butter, cottage cheese, egg and a pinch of s alt. Roll it out, put it in a mold and put it in the freezer for 20 minutes. Then prepare the filling: mix sugar, vanilla, sour cream, egg yolks. Mix thoroughly without whisking. Pour this mass onto the cake pulled out of the freezer, put currants on top and bake for 40 minutes at 180 degrees. When you take the cake out of the oven, let it cool down. Now you can eat!
Be aware that whitecurrant is not for everyone. This berry is contraindicated for people suffering from gastritis with high acidity, as well as peptic ulcer of the duodenum and stomach.
