Ingredients: seven hundred grams of elk meat, one white and one red onion each, two liters of boiling water, two potatoes, one carrot, two stalks of celery, one fennel root, three tablespoons of flour, two tablespoons of paprika, herbs, s alt and spices, vegetable oil for frying.
The meat is cut into large pieces, the onion is chopped, everything is fried in oil, with a little s alt. Then boiled water, chopped potatoes and carrots are added to the first dishes of elk (in our case, this is soup), boiled for fifteen minutes. Then finely chopped celery and fennel are added.
Separately fry flour and paprika in oil, pour the mixture into the soup and cook for five minutes. Chopped greens are placed in the finished dish.
Moose kebab
Ingredients: one kilogram of elk meat, one hundred grams of pork fat, three onions, one glass of white wine, s alt and spices, herbs.
The loin is cut into large pieces, placed in a bowl, poured with wine and allowed to stand for several hours. Then the meat is strung on skewers, alternating with bacon and onions, s alted, sprinkled with spices and fried over hot coals for fifteen minutes. Usually such elk dishes are sprinkled with herbs before serving.
Goulash
Ingredients: one kilogram of elk meat, one hundred grams of fatpork, four cloves of garlic, one onion, half a spoonful of ground pepper, one and a half glasses of water, one spoonful of starch, s alt.
How to cook moose? It is necessary to fry meat, lard, onion and garlic in a pan, adding pepper and s alt, for five minutes, then pour in water and simmer for two hours. Then stir water with starch, add the mixture to the meat and cook for a few more minutes until the starch thickens.
