Mushroom soup is a fragrant and satisfying first course, which is often prepared by Ukrainian housewives. There are many variations of this soup. But the main ingredient remains unchanged - mushrooms. They can be both fresh and dried. We offer you several recipes for every taste. Good luck in the kitchen!

Product List:

  • flour (w/s) - two glasses are enough;
  • mushroom broth cube - 1 pc.;
  • medium bulb;
  • 300 g fresh mushrooms;
  • medium-fat sour cream - 1 tbsp. l.;
  • greens (cilantro, parsley, dill sprigs).

Practical part

  1. We put it on the table, everything from which the mushroom soup will be cooked. What's next? We take champignons, wash them in running water. Carefully clean the hats with a knife. The legs do not need to be cut off. Everything goes to work. Mushrooms cut into small plates.
  2. Remove the husk from the onion. Wash the pulp first, then chop into cubes. Fry over low heat. Transfer the contents of the pan to a plate. Tillput aside.
  3. Now send the mushrooms to the hot pan. Fry with refined oil. Don't forget to flip the pieces. The whole frying process will take no more than 15 minutes. Turn off the fire.
  4. Take another frying pan. It should dry-fry the flour. As soon as it acquires a golden hue, immediately turn off the fire. The flour should be completely cool.
  5. Fill the pot with water (½ volume). We put it on the stove. We are waiting for the liquid to begin to boil. Add a cube of mushroom broth to the pan. We mix. We also put fried mushrooms and onions there. Stir again.
  6. In a bowl, combine sour cream and cooled flour. The resulting mixture is sent to the broth. If lumps appear, then do not worry about it. Just stir the broth, then they will disappear. After 5-10 minutes, the mushroom yushka according to the Transcarpathian recipe will be ready. Let the dish stand for a while with the lid closed. We distribute it on plates, decorating with sprigs of greenery. We wish you bon appetit!

Cooking mushroom soup with beans

Required ingredients:

  • red or white beans - enough for 250g;
  • 0.5 kg potatoes;
  • medium bulb;
  • 50g each of refined oil and fresh mushrooms.

Detailed instructions

Step number 1. Thoroughly rinse the mushrooms with tap water. We put them in a saucepan. Fill with water. We cook until ready. This process takes 20-25 minutes. The broth is not poured anywhere. Cooked mushrooms should be cooled. Then grind them with a knife.

Step number 2. We wash the potato tubers, peel them. Cut into medium cubes.

Step number 3. Put the beans in a saucepan, fill with cold water. Cook for 60 minutes.

Step 4. Add the beans and potato cubes to the pot with the mushroom broth. We put on fire. As soon as the liquid begins to boil, we put mushrooms in the future soup. S alt. Cook until potatoes soften.

Step number 5. Chop the peeled onion into a cube. We send it to a hot pan. Fry using oil. The onion pieces should be golden brown. This passivation is added to the pan. After 5 minutes, turn off the fire.

Step number 6. We got the most fragrant mushroom soup. It remains to pour the soup on plates and invite the household to the table. We recommend serving this dish with black bread. We decorate each serving with chopped herbs or whole branches (cilantro, dill).

Mushroom soup of dried mushrooms

Grocery set:

  • medium onion - 1 pc.;
  • green onion - half bunch;
  • 100 g dried mushrooms and small pasta each;
  • one large carrot;
  • refined oil - enough 3 tbsp. l.;
  • 1.5L stock;
  • favorite spices.

Cooking process

  1. Where do we start? Place the dried mushrooms in a bowl. Fill them with boiling water (300 ml). We leave for 20 minutes. Then you need to drain the mushrooms. We do not pour out water from under them, but we save it. We'll still need her.

  3. Pour oil into the pan in the right amount. Warm up on the stove. Add chopped onion (preferably in cubes) and grated carrot on a coarse grater.
  4. Pour the liquid remaining after cooking the mushrooms into the pan. That's not all. Mushrooms cut into medium pieces. We send to other ingredients. We are waiting for all this to boil. Reduce the fire to a minimum. Cook for 1 hour.
  5. Fire can be turned off. Add chopped green onions to the soup. We cover with a lid. Timed for 10 minutes.
  6. In another saucepan, in s alted water, boil small pasta. What's next? We send the pasta to the soup. We mix. Sprinkle with your favorite spices. If necessary, heat the soup.
