Surprisingly tasty and beautiful dishes can be obtained by folding small things from the meat mass, placing various fillings inside them. Beef rolls are prepared according to this principle. As a shell, you can use whole slices of meat, previously lightly beaten and pickled. Also, the original version may be wrapping a spicy filling in a mass of minced meat.
Beef rolls with mushrooms
This dish uses an amazing product - enokitake - as a filling. These are white Japanese mushrooms with small caps and thin long legs. Before wrapping in meat, the filling is not additionally processed. But the gravy, in which beef rolls are stewed, is particularly piquant and rich. Lightly beat the meat plates (400 g) to obtain a uniform thin layer, then place them for 15 minutes. inmarinade from 1 tbsp. l. soy sauce, 1 incomplete tsp. dry garlic powder, 2 tbsp. l. any vegetable (preferably olive) oil. Mushrooms (200 g) prepare the size of future rolls. Wrap them tightly in meat pieces. It is allowed to protrude from both edges by 2-3 cm. Quickly fry until golden brown in hot oil. Place the half-cooked rolls in a saucepan and pour over the sauce: 1 faceted glass of water or low-fat meat broth, 1 full tsp each. cornstarch, granulated sugar, freshly ground black pepper and table s alt. Simmer with the lid slightly covered for about half an hour.
Is it possible and how to make a small minced meat roll?
Of course, it is much more convenient to wrap the filling in slices of meat cut out in the form of thin plates. As a rule, they are beaten a little through plastic wrap or silicone before filling. Also, to give softness, you can marinate the workpieces a little. But it happens that a piece of meat that is not always available can be cut into neat slices of the same thickness and size. In this case, you can try another cooking option. It turns out a very tasty and juicy dish when used as an outer layer of minced meat. And so that the beef rolls keep their shape well, they are additionally wrapped with long pieces of bacon on top. After frying, the upper layer becomes ruddy and quite strong. Thanks to this, the internal juiciness of both the filling and ground meat is preserved. Ingredients of mincemeat roll
The dish consists of three layers. Consider what is needed to create each of them.
Ingredients of colorful and juicy filling:
- 200 g fresh mushrooms (best to take champignons);
- 2 tbsp. l. refined (odorless) any vegetable oil;
- 3 large garlic cloves;
- large bunch of fresh spinach (about 150-180g);
- 2 large fresh bell peppers (red)
- 3-4 medium soft sun-dried tomatoes;
- ½ or slightly more tsp. coarse s alt;
- 1 top st. l. Italian savory dry seasoning (can be replaced with Provencal herbs).
Ingredients of minced "fur coat":
- 1 kg lean without films and beef vein;
- 1 fresh chicken egg;
- 1 large garlic clove;
- a small bunch of greens (parsley, basil);
- a pinch of dry oregano;
- ¼ tsp. hot freshly ground pepper;
- pinch of red cayenne pepper;
- ½ or slightly more tsp. s alt.
Composition of the fixing layer:
- 7 to 10 long, narrow pieces of bacon.
Preparation of minced meat roll
From the proposed products you can cook one big roll. When cooled, it will look very nice in the form of cut transverse plates. If you want to serve piping hot beef rolls, make smallportion blanks.
Preparing the filling
Mushrooms clean and chop into small thin plates. Chop the garlic with a sharp knife. In hot oil, quickly fry the mushrooms, evaporating the liquid. After 15-20 min. add garlic, aromatic spices, chopped spinach and s alt. Simmer the mass for a few minutes. After cooling, mix with peeled and diced sweet meaty peppers and sun-dried tomatoes.
Forming the mince layer
Meat grind finely (if necessary 2 times) through a meat grinder. Stir in crushed and chopped garlic, greens chopped with a sharp knife, spices and a chicken egg into the mass. Beat well, s alt the mixture. Spread parchment paper on a baking sheet and spread the minced meat on it with a layer of 1.5 cm. Put the filling on top. Carefully lifting the parchment, gradually roll up the mass.

Wrap the meat pieces around in a spiral pattern.

Place the roll in an oven preheated to medium temperature and fry for 50-60 minutes.
How to make beef and cheese rolls?
Similar to the first proposed option, you can get a slightly different dish in appearance and taste. This recipe for beef rolls suggests a different filling. Use cheese as a filler. It is best to take hard varieties, which, when heated, melt and turn into a homogeneous viscous mass. Firstly, it is advisable to use young beef or veal without veins and foreign films for cooking. When cutting, try to move along the fibers and form blanks of the same thickness. Then carefully beat the pieces with a kitchen hammer through cling film and place in a marinade of wine, vinegar or lemon juice. Grate the cheese on a coarse grater or cut into cubes. By placing on each meat piece about 1 with the top of tbsp. fillings, wrap products in rolls. Place on a baking sheet and bake until tender.
