Japanese pizza

Actually, okonomiyaki is a Japanese "pizza", fried flatbread with various toppings. True, it is prepared in a completely different way than the usual Italian yummy for us. From Japanese "okonomiyaki" translates something like this: "fry what you want / love." This gives a lot of room for imagination.

In the restaurants of the Land of the Rising Sun, these cakes are fried on special stoves (teppan). These flat metal slabs are usually mounted directly into the table at which visitors are seated. Those who come choose the filling, and the chef prepares the order right in front of them. There is a cafe where people can make their own okonomiyaki, similar to Asian "samovars" with boiling broth andmany ingredients in individual bowls.

What is

Traditionally, a tortilla consists of water, eggs, flour and cabbage (sometimes also noodles). When it is browned on teppan pancake (fried on both sides), okonomiyaki is brushed with a special thickened soy sauce and sprinkled with shavings or powder from dried tuna and seaweed.

A dish originated from the Chugoku and Kinki regions. With the spread across the country, the traditional okonomiyaki recipe began to acquire various variations, depending on what kind of food is popular in a particular province.

Cooking okonomiyaki at home

The okonomiyaki recipe is quite simple, and the necessary ingredients can be bought at any nearby store. It is unlikely that you have teppan at home, but this is not critical. You can cook Japanese pizza without this stove. To do this, you just need a flat cast iron pan or a regular pancake maker. So, there are options for cooking in the oven, when okonomiyaki is baked like an open cabbage pie, but more on that later.

To prepare an adapted version of the Japanese "pizza" according to a more, so to speak, Western okonomiyaki recipe, you need:

  • 200 grams of fresh white cabbage.
  • Small onion.
  • 200grams of egg noodles.
  • Glass of water.
  • Shrimp.
  • Three tablespoons of wheat flour.
  • 100 grams of ham.
  • 50 grams of hard cheese (any variety will do).

Let's start cooking

Start with the preparation of seafood. Pour boiling water over the squid carcass, peel it and cook in boiling s alted water for no more than two minutes so that the meat does not become tough and “rubber”. Cut it into small pieces. Then boil the shrimp and peel them from the shells. Choose the size and quantity of these clams yourself, depending on what you like best.

Boil the egg noodles until tender, then cut them into several pieces so that they are not too long. Chop the cabbage, cut the onion into small cubes, and cut the ham into small strips.

In another cup, beat the egg with water, and it needs to be poured in about 2/3 cup. Gradually add the flour and stir until the dough is uniformly thick. After that, combine it with the ingredients from the first bowl and mix thoroughly.

Put the resulting mixture in portions on a hot frying pan, leveling to the same size with a spatula. Do not forget to put the ham on top, after which we fry on both sides until fully cooked (as in the photo). When serving, okonomiyaki is sprinkled with grated cheese and fresh chopped herbs. Classic recipe

If you manage to get shavings or powder from dried tuna, as well as seaweed, then you can make a classic Japanese "pizza". Reviews about the recipe for okonomiyaki with tuna, people leave a wide variety. But many find it special and authentic.

To do this, nothing is added to the dough except cabbage. Pancakes are fried on both sides until cooked, and then smeared with specially condensed soy sauce. To make it so, you just need to add starch to it until its consistency resembles melted chocolate. And then sprinkle with shavings or powder.

Okonomiyaki in the oven

Okonomiyaki doesn't have to be fried at all, this Japanese pizza can also be baked in the oven. Then it turns out a kind of open cabbage pie. Mushrooms, chicken and bell peppers are perfect for this as an addition.

Mushrooms need dry porcini, they should be soaked. When they are soaked, drain the water, leaving a glass - it will come in handy for the dough, the taste of which will turn out to be mushroom.

Chop cabbage, mushrooms, chicken and sweet pepper finely. In a large bowl, mix the egg with flour and mushroom juice, where we add cabbage and a spoonful of soy sauce.

In a hot frying pan, fry the mushrooms, chicken and pepper for five minutes, after which we spread it on a greased baking sheet in the shape of a square, leveling it with a spatula. From above we form a layer of cabbage dough and send the "pizza" to the oven for thirty minutes at a temperature of 200 degrees. After thirty minutes, take out the okonomiyaki and divide with a spatula into 8-9 portioned pieces, each of which is carefully turned over and sent back to the oven for half an hour. Serve this version of okonomiyaki with soy sauce, mayonnaise and fresh herbs.
