Tired of the banal salads that have to be prepared for every holiday table? Do you want something new, originally designed and certainly very tasty? Then turn your attention to a dish with the unusual name Georgian beet pkhali. This dish is prepared quickly enough and will be a good table decoration for a holiday or a family feast.
Ingredients
- Beets - two pieces weighing 200-250 grams each.
- Cabbage - one small head.
- Walnuts - one hundred grams.
- One large onion - red, sweet.
- A couple of garlic cloves.
- Two hundred grams of spinach (you can take frozen).
- Half teaspoon of saffron.
- Spices: suneli hops, coriander, a couple of spoons of spicy adjika.
- S alt, ground black or red pepper (to taste).
- Greens - cilantro, parsley.
Cooking beets
First, cook the vegetables in the oven. The main ingredient in the beet pkhali recipe is, of course, the red beauty, which we will bake. To do this, you need to clean the beets, you can cut intosmall slices, or you can bake whole (depending on how much time you have to cook, because a whole beetroot will bake a little longer). Each piece of beetroot must be wrapped in foil and placed on a baking sheet. Put in a preheated oven and cook for forty to forty-five minutes.
Cooking cabbage
Georgian beet pkhali is not complete without boiled cabbage. To many, such an ingredient will seem tasteless, but do not rush to judge. First you should wash the cabbage and disassemble it into petals. We put a pot of water on the fire, add a little s alt to it and carefully lower the cabbage leaves there. Cabbage will cook until done. As a rule, it is 15-20 minutes.
Cooking spinach
Georgian beet pkhali spinach, the recipe of which we offer, will also be boiled, like cabbage. Remember, if you don't find it fresh (and most likely you won't), you can use store-bought frozen bags. Let it thaw a little before cooking. Let the spinach sit at room temperature for a while while you work on the kale and beets. After that, it can be lowered into s alted boiling water and boiled until tender.
Use a meat grinder
Next, to cook delicious beet pkhali, we need a kitchen assistant - a meat grinder. Also stock up on a few separate plates. We will mix and combine the ingredients later. In a separate bowl, chop the walnuts. Onion, garlic will go in another plateand greens. Here you can immediately add spices - suneli hops and ground coriander.
After the cabbage and beets are ready, they should be cooled down a bit. This can be done by simply waiting for a while. Or you can just put the vegetables for a few seconds under cold water. Now, just like all the other ingredients, grind them with a meat grinder. Remember, each ingredient should be on its own plate for now.
Shape balls
Now it remains only to collect all the chopped products together. Beet pkhali are small balls that look like meatballs. This is the form we need to achieve. Although you can experiment and create your own cutlets of the original form.
All our ingredients will make two types of pkhali. Beetroot Recipe: Mix together chopped beets, walnuts and some greens with garlic and onions. Spinach recipe: mix balls of boiled cabbage, greens with garlic and onions, boiled spinach. As a result, we get two types of balls: green and red. From above they can be decorated with large cilantro leaves or dill sprigs. In original Georgian recipes, you can find beet pkhali, which are decorated with pomegranate seeds. This decoration will look especially impressive on green pkhali.
Pkhali varieties
This dish will be a very unusual table decoration. I must say that beet pkhali is great as a vegetable side dish for meat and goulash, barbecue and barbecue. However, the residents of Georgia themselves believe that pkhali isspecial kind of food. If Europeans serve a vegetable snack to a meat dish, then Georgians will eat pkhali just like that. Fatty and vitamin-rich walnuts give this dish a special satiety, so it’s quite possible to fill up with such a dish.
To decorate the dish (if you decide to serve it as an independent dish), you can use fried onions. Finely chop two small onions, fry them in a pan with minced garlic and serve with pkhali.
There are several varieties of pkhali. Forming cutlets can be done from different products:

- Cabbage, greens, onion and garlic.
- Boiled chopped eggplant, herbs, garlic and onion.
