Champagne is a sparkling drink that brings to mind a deep green bottle with a popping cork. The favorite drink of women got its name in honor of the region in the north-east of France, where the production is located. The name "Champagne" is patented, and only sparkling wine produced in the Champagne region can rightly be called Champagne.
History of the Champagne
Old European newspapers abound with Champagne drink recipes. Cocktails based on it, containing brandy and orange liqueurs, can be found even in the oldest collections of recipes and cookbooks published as far back as 1861. Similar drinks were also mentioned in 1869 weekly papers and stories by Mark Twain. One of the most famous quotes about Champagne was in Jerry Thomas' 1862 manual.
Taste preferences of the populationof that time were significantly different from those familiar to us today: a few decades ago, Champagne was much sweeter than the currently popular dry drink. Thomas's 1862 book calls for shaking all the ingredients, including the bottle of alcohol, which was undoubtedly a mistake, as mixing the ingredients of the drink significantly spoils the taste of the cocktail.
Recipes from Jerry Thomas' book
The first recipe that clearly contained certain flaws:
- 1/2 tsp sugar;
- 1 or 2 drops Bitter (strong alcoholic drink with a pronounced bitter taste);
- a slice of lemon zest.
Fill a glass 1/3 full with crushed ice. Lay out the ingredients. Add sparkling wine. Shake well and serve.
A later version of Thomas' Champagne recipe (1887) contained the necessary adjustments:
- take 1 piece of sugar;
- add 1 or 2 drops of bitters;
- put a small piece of ice on the bottom.
Fill a glass of sparkling wine, splash with a spoon and garnish with a thin piece of twisted lemon peel - the Champagne drink is ready, enjoy it.
It is believed that a man named John Dougherty made this drink famous by adding brandy to the composition, and later won the New York cocktail competition in 1889.
