For ten slices of rye bread, we need 200 g of lightly s alted herring fillet. First, cut the fish, remove all the bones from it. Then we cut it into longitudinal pieces no more than two centimeters long. In a cup with two soup spoons of vodka, dissolve a pinchsugar and stir in freshly ground black pepper. Pour pieces of herring with this liquid, cover with a film and send to marinate in the refrigerator. Three hours later, we begin to form canapés with herring. We take 100 g of butter softened to room temperature, mix it with finely chopped dill (to your taste, somewhere around half a bunch). In a dry frying pan, fry a spoonful of coriander seeds for 2-3 minutes, then knead the spice in a mortar and drive it into fragrant oil. We smear slices of Borodino bread with them. We cut each into four parts. Wash the apple, cut it into thin slices, sprinkle them with lemon juice so that they do not “rust”. Place a slice of herring on bread and butter. We place an apple slice on it.
Canape with herring on skewers
For this appetizer, the bread is sliced like croutons, that is, the crust is carefully peeled off with a grater. If desired, you can lightly dry the slices in a toaster or fry them like croutons in oil. We cut the spicy s alted herring and cut it into pieces according to the number of canapes. We chop the lettuce onion (red, without bitterness) into rings. We catch the required number of tiny gherkins from the jar. If there are none, cut the pickled cucumber into circles of medium size. We form our canapés with herring. We put the fish on bread without butter, on it - an onion ring, and on top - a cucumber. We pierce the entire structure for stability with a skewer or a toothpick.
Canape with herring salad
150 g fillet of fatty herring should be finelycut (or scroll through a meat grinder). Rub half a sour apple into it. Mix the mass with a mixer with one hundred grams of softened butter, chopped dill and a spoonful of mustard. Cut brown bread into small slices. Put the fish salad on them and decorate the canape with herring with a parsley leaf or a green onion feather. If this sandwich option seems too undietary for you, replace the butter with the same amount of mayonnaise.

Making croutons from white toasted bread. While still hot, rub them with a chopped clove of garlic. Boil three tablespoons of tomato sauce with a pinch of red pepper in a pan. You can add to the pasta and a clove of garlic, which rubbed the bread. When the sauce has cooled, mix it with 50 grams of butter. We spread the bread. We lay a thin circle of soft-boiled eggs on it. On top we place a piece of chopped lightly s alted herring. We fix the result with a skewer and send it to the refrigerator to soak for a quarter of an hour.
